It's Yummy Tea Time

Dear awesome you! 

It's so hot that all that you want is to chill in a very cold swimming-pool. 
I totally understand :)

Hot doesn't mean no snack. It may mean no tea, but no way to miss delicious pancakes!




** Wonderful Pancakes **

 (for 12 pancakes)

1 cup whole wheat flour (Mitsides flour = Perfect)
1 Tsp baking powder

2 Tsp of muscovado sugar

 a pinch of salt

1 cup vanilla soya milk 
1 Tsp vanilla extract
2 Tsp coconut oil + oil for the pan



In a bowk, whisk together the flour, the baking powder, the sugar and the salt.
Pour all the liquids (soya milk + vanilla + coconut oil) into the dry mixture. 

Mix until smooth and fluffy.

When the surface of the lighly oiled pan is hot enough that a drop of water sizzles on contact, you can start cooking the pancakes.

Three legumes' summer salad

Craving for easy cooked food? Check the recipe below: fast & delicious!






Three legumes' summer salad

50 g of red lentils (organic if possible!)
50g of greens lentils (organic is better)
50 g of black eyed peas
1/2 onion
1/2 red bell pepper
1/2 yellow bell pepper
1/2 raw zucchini
olive & balsamic vinegar/ Salt & pepper (to taste of course!)


Rinse legumes and be careful to pick over for bad peas or small stones!

To cook the lentils and the peas, always follow the instructions, but don't forget to taste if it's enough cooked for you.

To prepare the black eyed peas, it's better to leave them overnight in a bowl full of water (in order to rehydrate them and to make them smotther!)

I usually eat this salad for lunch whenever I exercise on afternoons (Yoga Power!).

Easy coming back

Spiced tofu salad

seasonal, light & simple


75 g of Philosophen Tofu
/4 of an onion, cut in small cubes
4 slices of one unpeeled zucchini
4 small long tomatoes
a pinch of oregano
4 sliced black (Kalimata) olives
olive oil & balsamic vinegar/ salt & pepper


Tofu will match perfectly with tomatoes and rocket salad. You will find organic Philosophen Tofu in every good shop in Cyprus. Enjoy your lunch!

It's Apricot season

Dear awesome Vegans!
It's Apricot season in Cyprus. It's also time for baking pies :)
You will never need any cow butter to bake a delicious pie... check this here!

Ingredients
(for one pie)
200g of whole wheat flour
(or 150g of whole wheat flour + 50g of chesnut flour)
20g of muscovado sugar
10cl of water (can be replaced by vegetal milk)
5cl of vegetal oil (I use coconut oil)
a pinch of salt

Mix flour, sugar and salt. Then, add water and oil. Gently press the dough into a ball.
The dough needs to rest in the refrigerator for at least 30 minutes (1 hour is even better, if you can resist! ;).
Remove the dough 15 minutes before working quickly on it.  First, generously dust a clean, dry surface with flour. Then, Start rolling at the center of the dough and work outwards. Roll the dough into a circle. 





I generally bake the pie 10 minutes at 180°C before adding the fruits.

I also cook separately some fruits before baking them on the pie.

Amazing Carob Cake


Dear Vegan food lovers!

Carob* is very famous on Aphrodite's island. You can find it everywhere. 



In the past, our grandparents, when their families could not afford chocolate, they were cooking with carob. The carob can be replaced by chocolate in this amazing recipe, but it's one hundred times better with carob.




Amazing carob fondant (Marie's recipe)

340g of silken tofu

90g of organic white flour

100g of coconut sugar

60g of carob powder

3/4 tsp of salt

few pinches of cinammon

1 shot of warm espresso coffee

80g of virgin coconut oil


Mix all together and bake it at 200°C for 25/30 minutes. When the cake is in the oven, it needs a lot of attention in order to be very fondant!
